Do you mean a pure grilled cheese or add ins?

I like doing provolone with some honey and salt and pepper. You can do provolone on its own too, but if its a little harder to melt on its own, so gotta watch for that

I usually use American processed cheese flavored congealed food sheets due to their lower melting point, but colby or Gouda make great tasting grilled cheese.
